Coyote is one of mezcal's rare finds — a wild variety of Agave americana that grows in just a narrow pocket of Oaxaca and takes eight to ten years to mature. Fifth-generation maestro Angel Cruz Robles roasts it in an earthen pit, hand-mills it, ferments in oak, and distills in clay pots the traditional Sola de Vega way. At 46.8% ABV, expect peat and hard candy on the nose and deep, earthy toasted agave on the palate. Sip it neat and slow.
