Most mezcal comes from Oaxaca — this one doesn't. Maestro José "El Güero" Ortega, a third-generation producer in Puebla's Sierra Madre, works with wild Agave marmorata, a species that takes 12-20 years to mature in tough, rocky soil. The agave is roasted in an earthen pit, mashed by hand with a wooden mallet, fermented in oak vats, then run through a copper alembic still. The result: fresh-cut grass and vegetal aromas, raw sugar cane on the palate, and a clean, dry finish. Sip it neat to catch every mineral note.
