Jabalí is one of those wild agaves mezcal geeks whisper about — notoriously tricky to distill, and worth the effort. Maestro Cosme "Tucho" Hernández, a fifth-generation mezcalero, makes this in San Baltazar Guelavila, Oaxaca, roasting the agave in a pit, crushing it under a tahona stone, fermenting in oak, and distilling in a copper still. At 50.1% ABV, expect aromas of spice and dried chiles with a meaty, overripe-fruit character. Sip it neat and slow, alongside good conversation.
