Most mezcal comes from Oaxaca, but this one hails from Durango, where mezcalero Ventura Gallegos and his co-op in Nombre de Dios work with wild cenizo agave (Agave Durangensis) that takes 10 to 14 years to mature. Roasted over oak and mesquite, fermented with wild airborne yeast, then double-distilled in copper to 47%, it opens floral with leather and wet clay before turning to buttered popcorn, coriander, and stone fruit. Sip it neat and slow.
