In San Luis del Río, Oaxaca, maestro mezcalero Gregorio Velasco Luis still bakes espadín agave—matured eight to ten years—in earthen pit ovens for six days, then crushes it under a horse-drawn stone wheel before natural fermentation in wooden vats. Double-distilled in copper pots with nothing added, this joven mezcal opens with smoke and green herb, moves into roasted agave and citrus, and finishes with a whisper of cocoa. Pour it neat in a copita, maybe alongside orange slices and salt.
