Forty minutes south of Monterey, the Santa Lucia Highlands catch fog off the bay each morning and gusting afternoon winds — a slow-ripening combo that Wagner Family winemaker Charlie Wagner leans into for this Chardonnay. Aged about 11 months in a mix of new and used French oak, with a portion through malolactic fermentation and hand-stirred barrels, it comes out round and creamy: baked croissant, apricot, honeysuckle, lemon squares, balanced by bright citrus acidity. Pour it alongside seared sea bass or creamy fettuccine alfredo.
