Calvados doesn't get much airtime outside Normandy, but this Pays d'Auge bottling makes a case for paying attention. Distilled from a blend of roughly thirty Norman and Breton apple varieties, then rested at least four years in old wine casks on a seventeenth-century estate, it comes out smelling of baked apple, gingerbread, and vanilla, settling into a finish of almond, beeswax, and honey. Pour it after dinner in a small glass, neat, and let the apple orchard show through.
