Papalote agave grows wild and cultivated in the hills above Chilapa de Alvarez, where Don Tomas and his son Emiliano are fourth-generation mezcaleros. Their maguey is wood-fired for days in an earthen oven, hatchet-chopped, fermented open-air in pine tinas, then double-distilled in a small copper still. Look for the family's signature milk chocolate and dried chile alongside bright orange and peach. These are among the last batches Don Tomas made. Pour it neat in a copita and take your time.
