Mal Bien puts the maker front and center: this white-label Espadin comes from Oscar Morales, the fourth generation of his family to distill in San Dionisio Ocotepec, and it carries his father Lucio's recipe. Agave roasts in an earthen pit oven over encino wood, gets crushed by tahona, ferments in pine, then runs twice through copper. At 45.5%, the batch leans savory: roasted agave, cedar, citrus, and balanced smoke that never turns sharp. Sip it neat, or let it hold its own in a cocktail.
