Here's a rare three-agave ensamble worth slowing down for. Felipe and Ageo Cortes, third and fourth generations distilling in Mengoli de Morelos in Oaxaca's Miahuatlan district, blend arroqueno, bicuixe, and jabali—the arroqueno lending sweetness, bicuixe an earthy edge, and famously tricky jabali bringing sharp floral lift. Agave roasts in wood-fired ovens, gets crushed by an ox-drawn tahona, ferments open-air in sabino wood, and doubles through copper. Sip it neat and let the mint and cinnamon notes slowly unfold.
