This one's brandy, not cognac—by a technicality. Distillerie des Moisans, the family house behind Deau Cognac, distills it along the Charente River in the Fins Bois with the same process and care as their cognac line, though these vines sit just outside the official Cognac boundary. The XO carafe blends eau-de-vie at least 15 years old into notes of caramel and walnut, opening into dried apricot, poached pear, and a cinnamon-warmed finish.
