New to baijiu? This is a friendly place to start exploring China's most storied spirit style. Bainian—meaning "hundred years"—is a nongxiang, or strong-aroma, baijiu from Luzhou in Sichuan, where the distillery has fermented grain in earthen pits since 1573. The nose leans peppery with ripe peach, then the palate turns gently sweet with peach and pear. Clear and full-bodied at 52% ABV, it's traditionally poured neat at room temperature or lightly chilled alongside bold, savory food.
