Overview

In Bué, one of Sancerre's classic villages, the Crochet family has grown Sauvignon Blanc on Oxfordian limestone for decades. Grapes from the estate's caillottes and griottes plots ferment in stainless steel, then rest on lees for the better part of a year before bottling, a slow build that shows up as chalky minerality laced with citrus blossom, pear, and a faint honeyed floral lift. Pour it alongside salmon in beurre blanc or a good risotto.
