Luc Belaire's Brut Gold comes out of Burgundy, built from a Chardonnay and Pinot Noir blend, but the twist is the dosage: organic sugarcane instead of the usual sugar, a nod to sparkling wine's 1920s French heyday that gives it extra length and structure. Expect white flowers, citrus, and stone fruit like peach and grapefruit on the nose, with a dry, light palate and crisp finish. Pour it chilled in a flute for a toast, or alongside brunch.
