Louis Latour's Beaune Premier Cru "Vignes Franches" is a Pinot Noir from one of Beaune's best-regarded mid-slope vineyards in Burgundy's Côte de Beaune. The name traces to an old tax exemption once granted to this parcel, "free from tithes." Grapes are hand-harvested and fermented in open vats, then aged 10-12 months in French oak (about 35% new, medium-toasted by Latour's own cooperage), built on limestone-and-clay, pebble-flecked soil for steady drainage. Expect cherry, cocoa, and licorice notes over supple tannins. Pour with beef bourguignon, duck breast, or a wedge of Camembert.
