Espadin agave from Oaxaca, hand-milled and distilled in clay pot stills, the traditional method of Sola de Vega kept alive by brothers Julio and Eduardo Mestre. Clay lends a softer, rounder texture than copper, with sweet cooked agave, gentle smoke and a peppery finish. Batches vary slightly because each one is made by a different palenquero.
