Grown wild around Sola de Vega, Oaxaca, this towering maguey takes years to mature, and maestro mezcalero Don Antonio Amador coaxes it into something soft and aromatic. Hand-milled with a wooden mallet, fermented in sabino wood, and twice-distilled in small clay pots, this joven bottles at 46.7% ABV with citrus, walnut, and an earthy minerality.
