Tobalá is one of mezcal's wildest characters — a slow-growing, semi-wild agave that can take over a decade to mature, and the Santiago family of San Dionisio Ocotepec, Oaxaca has been coaxing it into bottles for three generations. Cooked in an earthen pit, crushed by stone tahona, fermented in pine, and double-distilled in copper, this 49% ABV mezcal comes out mineral and floral with lime, grapefruit, and a honeyed edge. Pour it slow, alongside strong cheese or a bowl of fruit.
