Most people picture reposado in a tequila bottle, but Los Javis rests its 100% Espadín mezcal in American white oak for eight to ten months instead. It's made the old way in Santiago Matatlán, Oaxaca — agave piñas roasted in an underground oven, crushed by horse-drawn tahona, then double-distilled in copper stills by a family that's worked these hillsides for generations. Expect chamomile and caramel on the nose, banana bread and marzipan on the palate. Pour it neat to let the barrel show.
