Espadín takes eight to twelve years to mature in Oaxaca's central valleys, and Los Javis honors that patience the old way. At their family palenque in Santiago Matatlán, the agave is roasted in an underground oven, crushed by a horse-drawn tahona, fermented with wild open-air yeasts, then double-distilled in a copper pot. The result leans savory and bright: orange blossom and honeydew up front, anise and apple on the palate, with a distinct saline snap. Sip it neat, or build a smoky cocktail.
