This blanco is distilled from 100% blue agave in El Arenal, Jalisco, and only the clean, sweet hearts of the run make the cut, with heads and tails left behind. A rare "Double Jima" technique shaves each pina twice to strip away green, waxy notes. What lands in the glass is mint and eucalyptus, cooked agave, honey and piloncillo, with a mineral edge.
