Finished in honey barrels and enhanced with hand-cut, hand-charred aspen wood discs from DU’s Kennedy Mountain Campus, this bourbon delivers a rich mountain character with a Taste Like None Other.
Aged over five years in new 53-gallon American oak barrels before being finished in honey barrels and rested with hand-cut, hand-charred aspen wood discs from DU’s Kennedy Mountain Campus. The combination of honey barrel finishing and Colorado aspen creates a uniquely smooth and layered bourbon experience.
Built on shared DU roots and Colorado pride, Aspen Honey Reserve represents the partnership between the University of Denver and Locke + Co Distilling. Crafted to honor community, tradition, and innovation, a portion of proceeds supports DU initiatives and scholarships.
Aroma: Warm honey and vanilla lead the nose, layered with toasted walnuts, caramelized sugar, and soft baking spice. Hints of Bing cherry, dried apricot, and subtle oak add depth and brightness.
Taste: Smooth and full-bodied with rich notes of honeycomb, caramel, and vanilla cream. Cinnamon, nutmeg, and gentle rye spice balance the sweetness while flavors of baked peach, dark cherry, and toasted oak create a rounded Colorado-style bourbon profile.
Finish: Long and warming with lingering honey, soft caramel, cinnamon, and light pepper. Subtle aspen spice and toasted oak slowly fade into a smooth vanilla finish.
