Big Catch Bourbon comes from Locke + Co. Distilling in Colorado, a small-batch bourbon built around a distinctive finishing trick: after resting over two years in new 53-gallon Missouri oak barrels, the high-rye and high-wheat mash bills get a second act with rye-soaked and first-use charred aspen discs added to the tank. That extra step brings out honey, vanilla, and toasted caramel on the nose, with rye spice, black pepper, and brown sugar carrying through the finish. Big Catch took Gold at the Denver International Spirits Competition. Pour it neat to catch the aspen character, or over one big cube for sipping.
Tasting notes
Aroma: Strong honey, vanilla notes with hints of dried berries, maple syrup and walnuts
Taste: Full-bodied with caramel, honey, and vanilla. Some rye spice and peppercorn round out the pallet.
Finish: Long finish with caramel, black pepper, toffee, light brown sugar, cinnamon
