Layer Cake's Shiraz is a South Australian blend built from two very different vineyards: sun-baked, sandy blocks near McLaren Vale's coast and wind-scoured, limestone-flecked hills in the Barossa, where old vines (some planted in the 1830s) yield tiny, thick-skinned berries. Aged in French oak, it opens with cocoa and warm spice before rich blackberry, dark cherry, and chocolate ganache take over on the palate, finishing long. Full-bodied and dry at 14.9% ABV. Pour it alongside grilled meats or roasted vegetables.
