Layer Cake built its identity on dessert-inspired complexity, and this Central Coast Pinot Noir backs it up: fruit sourced from Monterey and Santa Barbara vineyards goes through cool fermentation to lock in aromatics, then ages in French oak, some of it once-used Cherry Pie barrels. The result layers raspberry, cranberry and pomegranate over dried tea leaf, tobacco and a finish of smoky dark chocolate, all at 14.5% ABV. Pour it alongside grilled or smoked meats, or anything with a little char.
