Most rosé Champagne gets its color from blending in red wine — Laurent-Perrier does it the harder way. Since 1968, this Cuvée Rosé is made by macerating 100% Pinot Noir from ten Crus in the Montagne de Reims for 48 to 72 hours, pulling color and aroma straight from the skins before five years of aging. The result: a salmon-pink glass loaded with raspberry, redcurrant, strawberry, and black cherry, with a fresh, sharp attack that turns supple on the finish. Serve chilled alongside something salty.
