Here's an Irish single malt with a passport. Lambay is triple-distilled, matured in bourbon barrels, then finished in Cognac casks shipped over from the House of Camus in France to rest in the salt air of Lambay Island, a Baring-family estate off the Dublin coast since 1904. Trinity Well water from the island rounds it out. Unpeated and smooth, it leans into banana bread, vanilla, gingersnap and a whisper of fig. Lovely neat, or over one big cube.
Tasting notes
Nose: Digestive biscuits and freshly baked banana bread, with date sweetness alongside vanilla orchid.
Palate: Gingersnap biscuits alongside berries and white chocolate sauce.
Finish: Oily malt lingers alongside a touch of fig.
