Tobasiche isn't your everyday agave — it's the tall, slender maguey (Agave karwinskii) that grows on a woody stalk, prized for the mineral, high-acid character its slender piñas bring. Eduardo "Lalo" Ángeles distills this one in clay pots in Santa Catarina Minas, roasting the agave in an earthen oven, mashing by hand, and fermenting outdoors.
