Some mezcals chase transformation; this one just gets out of the agave's way. Eduardo "Lalo" Ángeles — fourth-generation mezcalero from the clay-pot village of Santa Catarina Minas, and a Real Minero alumnus — coaxes cuishe (a karwinskii agave) through the old Minas method: piñas roasted in an earthen pit, mashed by hand, fermented outdoors on wild yeast, then double-distilled in small clay pots. His aim is to let the agave and the village speak for themselves. Sip it neat from a copita.
