Laird & Company has been distilling apple spirits in New Jersey since 1698, and this 7½ Year Old Apple Brandy shows what that much patience does to fruit. It rests in charred oak barrels well past the norm, and every barrel gets tasted before it's chosen for the blend — only the best make the cut. Expect baked apple and cedar on the nose, with pear and warm wood carrying through the finish. Pour it neat in a snifter, or build it into a classic apple-forward cocktail.
