Raicilla is agave's lesser-known cousin, and Tutsi is its rarest thread—an ancestral Wixarika (Huichol) distillate from northwest Jalisco that nearly vanished for 25 years before one producer coaxed it back. Wild maguey is roasted in a wood-fired underground pit, hand-milled with wooden mallets, fermented on the rock, and single-distilled in a traditional Huichol still. Expect something woodsy and complex, laced with citrus and a cool mineral streak. Pour a small measure neat, at room temperature, and sip it slowly.
