Jalisco makes more than tequila — raicilla is the region's older, quieter agave spirit, distilled in remote mountain tabernas for five centuries. Chef Esteban Morales sought out the state's best small producers to bottle here. This edition comes from brothers Benito and Jose Salcedo Rios, who roast Chico Aguiar and Maximiliana agave in adobe ovens, double-distill on family land, then rest the spirit three months in wood.
