Raicilla is agave spirits' quiet cousin, distilled for centuries in Jalisco's western sierra. This one comes from Don Ruben Peña in the mountain village of Mascota, where he roasts cultivated Agave maximiliana in a wood-fired adobe oven, ferments with wild yeast, and runs it just once through a hybrid Filipino-Arabic still. The result is soft and fruity: papaya, apple, pear, a whisper of fennel, and a bright lactic tang. At 42% ABV, it sips clean or lifts a cocktail.
