Most mezcal comes from Oaxaca, but this one hails from Durango, where maestro Jorge Burciaga works with wild Cenizo agave (Agave durangensis) that grows 8 to 14 years before harvest. He mills it by hand with an axe, ferments in wood tinas with spring water, and double-distills in a copper still. At 45% ABV, it lands spicy and peppery with an earthy, faintly lactic edge and a light, smooth finish. Pour it neat and sip slow.
