Wild tobalá is the agave that makes mezcal lovers lean in, and this joven from La Tierra de Acre earns the attention. Maestro mezcalero Honorato Cruz harvests 10-to-12-year-old Agave potatorum in Santa Ana del Río, Oaxaca, crushes it under a stone tahona, ferments with spring water, and double distills in a copper still. The result is soft and sweet on the palate, herbal and earthy, with chocolate, tobacco, and a gentle smoky finish. Sip it neat, slowly, and let it open up.
