Tobalá is one of mezcal's more elusive agaves — rare enough that La Reliquia bottles it young and unaged, letting the spirit speak for itself. The family behind the label, from Santiago Matatlán, was among the first ten producers registered with Oaxaca's mezcal regulatory council, back when almost everyone else sold mezcal in bulk rather than bottled. Made in the Sierra Norte de Oaxaca using traditional, hands-on methods, it offers delicate floral notes, ripe fruit, a touch of smoke, and a soft, slightly bitter finish. Sip neat, slowly, in a copita.
