Most mezcal conversations start in Oaxaca, but this one comes from Michoacán, built around cupreata agave that grows high in the hills near Etúcuaro. A fourth-generation family roasts the piñas in a stone-lined pit over white oak, mills by hand, ferments in open-air wooden vats, and double-distills in a copper-and-pinewood Tarascan still. The result runs light and juicy with a wisp more smoke than you'd expect from the region. Sip it neat, or let it carry a smoky Negroni.
