The owl on the label isn't decoration — "la chouette" means "the owl," a nod to the birds that once kept watch over cider barns in Normandy. This rosé cidre comes from Saint-Pair-sur-Mer, pressed from red-fleshed apples and pears and left to carbonate naturally. It pours a soft pink and drinks demi-sec, with bright strawberry, pear, and green apple woven through crisp bubbles.
