Meet a verte (green) absinthe distilled in Val-de-Travers, Switzerland—absinthe's birthplace—by fourth-generation distiller Yves Kübler. The holy trinity of grand wormwood, sweet fennel, and green anise is macerated in wheat spirit and pot-distilled, then a second steep of peppermint, hyssop, and lemon balm layers it in. Bottled at 72%, each release is vintage-dated to its wormwood harvest. Expect bright mint on the nose and baking spice and anise on the finish. Slowly drip icy water over a sugar cube and watch it louche.
