Wild agave, patiently earned: this joven comes from maguey Arroqueño harvested after 8-15 years in the wild around Río de Ejutla, Oaxaca. Maestro mezcalero Adrián Bautista roasts the piñas in an earthen pit over red oak and mesquite, then double-distills in a copper still with a rectifying plate. Expect charred wood and citrus up front, grilled meat and gentle smoke through the middle, coffee and caramel on the palate. Pour it neat and let orange and ripe pineapple carry the finish.
