Koch's Espadin de Jayacatlan comes from Espadin agave grown seven to nine years in the hills of Jayacatlan, Oaxaca, then double-distilled in a clay pot (olla de barro) for a softer, rounder character. Expect sweet smoke up front, ripe fruit and herbs, then cooked pineapple, coconut, peach, and a whisper of cinnamon and white pepper. Pour it neat in a copita, sip slowly, and let it open up over good conversation.
