Koch El's Espadín comes from San Baltazar Guelavila in Oaxaca, where mezcalero Pedro Hernandez works with agave grown for seven to nine years before it's cooked and twice distilled the traditional way. The result is unaged and bottled at 47% ABV, opening with sweet smoke and ripe pineapple, then settling into coconut, rose, and fresh herbs on the palate, with cinnamon and white pepper trailing into a soft, sherry-like finish.
