"Koch" means fire in Zapotec, and this joven hails from Sola de Vega, a corner of Oaxaca long known for clay-pot distillation. It's made the ancestral way: espadin agave roasted in an earthen pit, hand-mashed, naturally fermented, then distilled in a clay olla and bottled at 47%. Expect roasted-agave sweetness, earthy minerality, a whisper of smoke, and a lift of tropical fruit and pepper. Pour it neat in a copita, or build a smoky paloma around it.
