Tipsy Sauce - Caramel Hard Sauce
Knappogue Castle's single malt begins with a minimum of 12 years resting in bourbon barrels, then moves into casks sourced from Marchesi di Barolo, the storied Piedmont winery tucked in the foothills of the Alps. That finish leaves its mark: a fruity nose of strawberry, cinnamon bun and caramel toffee gives way to a palate of red apple, berry and cherry, closing on peppery oak and a spicy finish. Non-chill filtered and bottled at 92 proof, it's built for slow, neat sipping after dinner, alongside dark chocolate or aged cheese.
