Kilinga Bacanora Silvestre is a Sonoran agave spirit crafted by Maestro Rodrigo Bojórquez Bours on the family's ranch in Álamos, Sonora, Mexico, where the Sierra Madre meets the coast. Made from wild Agave Angustifolia Pacifica harvested by hand with a coa after 7-9 years, the agave is roasted in volcanic stone pits over mesquite for four days, crushed on a traditional tahona, then double-distilled in copper pot stills before resting in stainless steel. Expect wildflower and citrus aromatics with green-apple tartness and a light violet finish. Pour it neat to explore its terroir, or shake it into a bacanora sour.
