Meet bacanora — Sonora's agave spirit with its own denomination of origin, and Kilinga makes theirs on family land in Álamos. Angustifolia Pacifica agave is roasted in mesquite-fired stone ovens, crushed in a traditional tahona, then double-distilled in pot stills. This reposado rests 2.5 to 3 years across Caribbean rum barrels, ex-bourbon casks and red wine oak, picking up wildflowers, vanilla, roasted coffee and caramel on the nose. The palate leans vanilla and agave into a smooth, woodsy finish. Lovely as a slow digestif or in a thoughtful cocktail.
