Kilchoman built its reputation as Islay's only farm distillery, and Batch Strength shows why. Barley smoked to 50 ppm goes through bourbon barrels, oloroso sherry butts, and re-charred red wine casks before bottling at a robust 57% ABV. Expect red fruit and heather blossom on the nose, toffee and warm spice on the palate, and a silky finish of buttered crumpets and honey. Pour it neat with a splash of water to open up the smoke, or pair with dark chocolate and blue cheese.
