About Blue Stag 7

We are the one and only sake brewery in Iida City, in the southern part of Nagano, Japan. In 1944, 38 local breweries consolidated into one and Kikusui Brewery was born. We use underground water from the Central Alps of Japan’s mountains, which is partially sourced by Sarukura no izumi, one of the top 100 natural waters in Japan.

Unique Polishing Method

Henpei Seimai is a unique rice milling method used for Blue Stag 7. The Henpei method effectively removes the unnecessary parts while retaining as much starch as possible. This milling method takes longer, but it makes Blue Stag 7 rich & clear and leaves it full of Umami flavor.
