Li hing mui — the salty-sweet dried plum that's a Hawaiian snack-aisle staple — doesn't usually meet tequila, but Kapena built its whole reputation on that mashup. Blue Weber agave from Mexico's Los Altos region gets infused with the tangy, tart-sweet plum flavor after distillation, landing bright citrus-candy and tropical fruit notes with a whisper of salinity on the finish. It won gold at the 2018 Global Spirits Awards, the sole infused tequila to medal in the category that year. Try it shaken into a margarita or on its own over ice.
