Overview

Kasumi Tsuru has brewed in the fishing village of Kasumi, on the Sea of Japan side of northern Hyogo, since 1725, and works only by the kimoto and yamahai methods, building the starter's lactic acid by hand instead of adding it. This everyday-grade dry bottling uses Gohyakumangoku rice milled to 68%.
